ENTROPY wines
Ryan Ponsford’s Entropy label is based in the Baw Baw Shire, where he produces minimal-intervention wines with an organic focus.
Awarded the 2022 Young Gun of Wine Award, Ryan takes a holistic approach to improve the biodiversity across the vineyards he farms. One was a neglected vineyard at Willow Grove, which he is gradually rehabilitating.
His next project is to expand the nursery block on his home property, designing and planting a high-density, high-yield vineyard from scratch.
He makes unique and minimal-intervention wines from the savagnin, sauvignon blanc, semillon, pinot noir and syrah grapes he harvests.
Ryan started out with Bill Downie and made his first wine under the Entropy label in 2019. He is challenging perceptions about some varietals, with wines he describes as quite traditional in style.
He uses "...old barrels, wild ferments, simple winemaking... I generally try to avoid making anything that’s fashionable because these things come and go. I just want to make well-farmed wines that speak of the incredible place we live..."
